Our independent Spotlight for the day is Pour House tap house in Tampa. Nestled into a beautiful courtyard in the grand central district this independently owned tap house boasts 40 delicious taps and are mostly composed of American Craft brews. Highly favoring local craft, Pour House Tampa does a great job on acquiring rare and unique brews and also offering the occasional firkin. Owners Andy and Peter Nietzel have definitely made a great neighborhood craft bar without the pretentiousness. They also are a dog friendly bar and offer free popcorn! Summer Avocado Chicken Enchiladas (Infused with Key West Sunset Ale)

Avocado cream sauce

Ingredients :

2 tbsp butter

2 tbsp all-purpose flour

2 cups organic sodium chicken stock

1/2 tsp cumin

1/2 tsp garlic powder

2/3 a cup of fat-free Greek yogurt (or sour cream)

salt and pepper (to taste)

2 whole avocados

cilantro

juice of one lime

Make a roux with butter and flour, cook for 2-3 minutes until golden-yellow. Slowly whisk in chicken stock, bring to a boil, drop to medium low and simmer for 5 min. Whisk in Greek yogurt and spices and remove from heat. In a food processor or blender add avocado, lime juice, cilantro (to taste) add this to other mixture and blend the two until smooth. Set aside

Enchiladas

Ingredients:

2 Hormone Free Chicken Breasts

1 12 oz bottle of Key West Sunset Ale

2 Poblano peppers thinly sliced

1 white onion thinly sliced

1 jalapeno (to taste)

1 packet fresh (Non Gmo) Corn tortillas

Place chicken in crock pot, and cook on high for 4-5 hrs, or low for 6-8 hrs. Pour in Key West Sunset Ale during the last 30 min for added flavor without residual bitterness. Add desired spices as well during this time

Saute onions and peppers til Caramelized. In each corn tortilla layer Avocado cream sauce, Chicken, peppers and onions, wrap til full and place seam down in baking tray, add cheese and avocado cream sauce on top and bake for 20 min at 375 degrees. Once cheese is melted serve and enjoy! Don’t forgot to crack open a fresh Key West Sunset ale while cooking and eating!
