FBC Presents: 12 Pairings of Christmas “Yule” Love!

The slightly brisk weather outside, here in sunny ‘Ol Florida, reminds us that it may be winter somewhere, but not here. As the holiday months continue, we have already made it through the family feeding day of thanks, otherwise known as Thanksgiving, and the shopping horror of black Friday. The holiday season keeps coming earlier and earlier every year, and speeds on by with a blink of an eye. Throughout all the chaotic shopping, stressful budgeting and family brouhaha, we wanted to stop and take a moment, to reflect on the holiday spirit that abounds.

This holiday season, we at FBC, have concocted a parings list that will be sure to please even the “Scroogiest” of palates. We decided to make a pairing for each part of the 12 days of Christmas song. We hope “yule” love it!

 

 

On the first Day of Christmas my true love gave to me :

A Partridge in a Pear Tree

Poached Pear with poached spicy figs paired to Devil’s Triangle IPA  – 6.6% ABV 66 IBU’s

The pear adds a fresh/crisp quality that helps build the subtle fruity nuances from the Columbus and cascade hops used in this milder IPA. The figs are enhanced by the chosen spice while the richness from the fruit is cut by the carbonation. The malty sweetness comes in, cools the heat, and helps wrap all these amazing flavors together in a palatable bow.

2 Turtle Doves

Soft boiled quail eggs over organic Frisee, arugula, cucumber and radish with sunflower seeds paired to

Key West Sunset Ale Amber Ale – 5% ABV 16 IBU’s 

The rich flavors from the quail egg will balance nicely with roasted/slightly nutty malt character from this medium bodied amber ale. The onslaught of different bitter intensities from the frisee, arugula and radishes are balanced and cooled by, a combination of the cukes and the sweetness from the malt. The crisp clean finish added with the earthy/nuttiness from the sunflower seeds, makes for lighter and unique twist on this winter dish.

 

3 French Hens

Roasted Garlic-Lime Cornish game hens paired to Key West Southernmost Wheat Belgian-Style wit- 5.1% ABV 16 IBU’s

Our Florida take on a traditional Belgian-style Farmhouse ale, The Southernmost Wheat is really the star of this pairing. Using the Southernmost wheat in the marinade, along with the garlic, onions and  the classic “quatre épices” (meaning “four spices” blend of clove, black peppercorns, nutmeg and ginger). This dish will combine a host of different flavors. The spices from the yeast and marinade, will play off each other and help enhance the lime tartness and orange zest from the real Key limes and orange peels used in this brew. The soft white wheat will add flavor but not fullness to the pairings and will leave your palate whisked clean by the high carbonation and fresh flavors.  – A good side dish with this pairings would be Red Beans and Quinoa

4 Calling Birds

Hard Cider infused Poblano & Duck Carnitas Taco’s Paired to Kelly’s Hard Cider – 4.6% ABV

We have been making award-winning hard cider here in the sunshine state for over a decade. The rich flavors from the duck meat combined with the sweetness of the Hard cider helps brighten up this pairing. The poblano adds a subtle heat and depth which help enhance the complexity to the dish. The champagne yeast from the cider, with its dry crisp quality, helps cut through the fat of the duck leaving a lasting savory flavor on the tongue.

5 Golden Rings

Buttermilk Onion Rings paired to Key West Sunset Ale Amber Ale – 5% ABV 16 IBU’s

An upscale take on a classic bar food. The Sunset Ale with the deep-fried onion rings makes for a simple yet sophisticated pairing. The slightly sweet and spicy flavors from the onion meld well with the nice biscuit and malt tones from the amber ale, lots of complimentary flavors. The carbonation helps cut through the richness of the buttermilk batter and adds a nice pop to the mouthfeel. Crunchy, full of flavor and washes down smooth and crisp.

6 Geese a Laying

Barley and Kale Risotto with Poached Goose Eggs paired to Florida Lager Amber Lager – 5% ABV 22 IBU’s

The heartiness of this risotto along with the more earthy and savory flavors from the kale, are balanced out by the light, malty caramel notes. The slight citrus flavors from the hops add a much-needed refreshing and lighter quality to this dish. While the richness from the poached eggs, are subdued by the clean crisp quality of this amber lager. A great pairing before caroling.

7 Swans a Swimming

(We have been told we are not allowed to eat Swan, and rumor has it, that they are not quite tasty. So we went with what swans eat, for this pairings)

Escargot with garlic beer-butter sauce and sourdough bread paired to – Swamp Ape DIPA -10% ABV 85 IBU’s

This celebration of holiday opulence, has huge flavors of smoke, citrus and earthy notes from the beer alone. The escargot adds a mouthfeel and texture that is truly unique, along with big flavors of garlic, butter and sweet malt from the sauce. The sourdough bread sops up any lingering earthy tones from the escargot and alcohol from this beast of a DIPA. A truly a one of kind paring not for the weak of palate.

Frank Cross would be proud of this pairing, but he would be drinking Tab and Stoli instead of Swamp Ape…

8 Maids a Milking

“The Frosty Pirate”  Gaspar’s Porter Robust Porter – 6.1% ABV 40 IBU’S

 

Ingredients:

 

1 scoop of Ben and Jerry’s Phish Food

 

1 shot (1.5 ounces) Fireball Whiskey

 

12 ounce bottle of Gaspar’s Robust Porter

 

Pour 8 ounces of Gaspar’s Robust Porter into a standard pint glass, pour in the shot of Fireball Whiskey and top it off with a fresh scoop of Phish Food. Definitely need a long sundae spoon and some napkins for this magnanimous grog of grogs!

9 Ladies Dancing

Pinky Shrimp cocktail paired to Key West Southernmost Wheat Belgian-Style Wit – 5.1% ABV 16 IBU’s

This Florida classic is simple yet decadent. Packed with protein and savory flavor the shrimp is delicious morsel that pairs well with bright, crisp and fruity flavors. The Wheat adds a nice tart bite from the key lime and spice from the coriander which helps soften up the mouthfeel of the shrimp along with the sharp carbonation. Just a classic pairing. For more of a zest quality add some lemon to the beer as well.

10 Lords a Leaping

Beer-Battered Frog Leg’s over jalapeno polenta paired to Swamp Ape DIPA – 10% ABV 85 IBU’s

This Florida Swamp pairings is packed full of unique flavors that resonate together. The heat from the Cajun spice is intensified by the hops in this formidable DIPA. Just as the heat may be too much the rich malt background comes in and cools the palate while adding a nice smokey quality that plays nicely with the flavor of the frog legs. The jalapeno polenta has slight heat  but adds a much-needed fullness to the pairing to help cover the booziness of the Swamp Ape.

11 Piper’s Piping

Ratatouille paired with Devil’s Triangle IPA6.6% ABV 66 IBU’S

This classic french countryside dish would not normally be paired with an IPA. This tomato based dish is chock full of delicious vegetables and has a nice spice bill to boot. Devil’s plays nicely with this dish only to add a much-needed bite at the end that helps lighten up this dish and make it seem brighter and less one-dimensional.

12 Drummer’s Drumming

Rosemary Roasted turkey leg paired to  Florida Lager Amber Lager – 5% ABV 22 IBU’s

The classic hand food, the turkey leg. Nothing goes better with meat than a classic amber lager. The roasted flavors from the turkey along with the rosemary play nicely with the caramel notes and subtle citrus hop character. The richness of the turkey is cut by the carbonation and leaves you filling happy and full.

FBC Autumn Ales and Florida Tales

The crisp cool air swoops in this time of year, rustles the dead leaves, sparks up amazing aromas from the kitchens and grills, and puts one in the mood for more satisfying beers and deeper flavors. All these aromas and smells and  help bring a little of the true Autumn feel down to the sunshine state. At FBC we are all for a little chill in the air and have a few different brews that will put a warm smile across your wind chilled face.

Our classic American Amber Ale, Key West Sunset Ale is what started it all for us. Weighing in at 5% ABV, this medium bodied malty brew is a perfect way to enjoy the nice cool breeze during the fall in Florida. Subtle nutty notes, some slight citrus and a nice crisp clean finish makes for a wonderful addition to any beach bonfire or cookout. You can find our flagship brew at any Publix, Total Wine, ABC and Whole Foods. (Also in local area markets)

Pairs well with Fresh From Florida roasted chicken and root vegetables, Florida Pinkies and for an added zest add a slice of some fresh Fall Tangerines.

Another brewery Favorite is our newly redesigned Robust Porter, Gaspar’s Porter. This dark and roasted dream of a porter weighs in at 6.1%ABV and contain 8 malts, including 6 specialty chocolate malts. This porter is our “Florida Porter”, a nice light to medium bodied porter with aromas of toffee and chocolate. To only then have your palate pillaged, by deep flavors of finely roasted espresso, velvety chocolate and finish with rich dark malt character. This beer also ages well for a few months adding more plum and licorice flavors to this already complex brew.

Pairs well with braised pork and sweet potato, seared swordfish with a squash and zucchini salad with navel orange vinaigrette. Also makes an amazing beer float when mixed with French Vanilla Ice Cream and Graham cracker crumble. You can find this pirating porter at Total Wine, ABC and Publix.

FBC Preps for TBBW’s Halfway There : A Rare Beer Festival

Being the oldest production craft brewery in Florida has its advantages. We started brewing in 1997 making delicious ales, lagers and ciders for the masses and have continued our tradition of excellence throughout the years. We have helped the FL craft industry grow by breaking down the walls early on to get craft beer into major grocery chains, restaurants and into you favorite theme parks!

Now many years later FBC is adapting and changing with the times, we are experimenting more and more, and always coming up with new styles and brews for our amazing patrons! As we finish our state of the art brewery in Cape Canaveral, we are filled with newly found vigor, and can’t wait to showcase what we have been working on for the past few months to our loyal FBC fans!

Since our tasting room is still under construction we thought what better way to present some of our new and exciting brews and one offs, then at the Tampa Bay Beer Week’s Half Way There : Rare Beer Festival ! This premiere festival will feature rare beer made by an amazing list of breweries from around the world. On Sept 7th at the historic Cuban Club in Ybor City, FL beer lovers will amass to taste a plethora of some of the most rare beers on the planet, ever collected in once space! For this reason we plan on wooing your tasting buds with some truly Florida inspired brews!

Tickets are $50 for GA 6PM entry and $75 for VIP 5PM entry. (VIP entry will be prior to 5 for pre-loading, kegs will start to pour at 5pm. All tickets include a commemorative tasting glass.) the event lasts til 9PM

FBC Summer Goodness: Southernmost Wheat

Fellow Floridians and FBC fans! We are happy to announce the our delicious Southernmost Wheat will be coming to the South Florida market on Draft very shortly! We currently have draft  of our delicious Belgian-Whit with REAL Key Lime in Tampa, Saint Petersburg, Fort Myers, Naples, Crystal River and the Treasure Coast!

Our Southernmost Wheat is a Belgian-Style White wheat or “witbier” brewed with orange peel, coriander and real key limes! This beer has bright fruity esters from the unfiltered yeast, crisp and clean flavors from the wheat and spices followed by a slight tartness from the real key lime! This beer is available year round, “Endless Summer” in a bottle!

You can pick up a six-pack of this delicious local brew at Publix, ABC, Total Wine and More, Whole Foods and Fresh Market!

FBC is “En Fuego” About the 4th!

Happy 4th of July FBC patriots! We hope that you have a safe and enjoyable independence day with your family and loved ones! We want to thank our ladies and gentlemen of our armed forces for serving each and everyday and also remember those who have given so much for our freedoms!

Today we celebrate a great independent restaurant near our brewery that celebrates the best of all things edible and drinkable! The Mansion, “a culinary entertainment complex” in Melbourne is a true foodies delight!

The facility comprises the 1905 three-story Queen Anne Victorian, the tavern, the garden and the terrace. The
concept is a casual culinary entertainment complex.
We have the cellars, which is a package store filled with unique microbrews, wines, micro-distilled spirits along
with the common brands. In the deli and bakery, we have made-to-order sandwiches and breads made fresh every
day and salads to go.
The tavern and terrace are a casual 380-seat restaurant with two bars, 60 beers on tap and multiple gathering areas. – Owners Dean and Beth DiGiacinto
The menu is a la minute (to the minute) and everything is prepared to order except the french fries! They also have a very exstensive wine and liquor cellar that all culminates with an impressive line up, of 65 taps of rare and unique brews from around the world.
They also have a fresh bakery and package store for to go purchases! The Big mansion has a unique history to the Melbourne area and the building itself dates back to 1905! A definite culinary delight with impressive attention to detail on every level! For a truly unique Brevard experience enjoy the roof top terrace tonight and drink in not only the delicious libations but the fantastic views and fireworks over the Indian River!
The Mansion
Today would be incomplete with out a little red white and blue companion! Don’t forget to pick up a limited edition Devil’s Triangle UNFILTERED IPA 22 oz. bottle today, only available at Total Wine Viera and Kendall! This IPA has a delicious burst of citrus aromas, great dank and resiny hop character followed a light bitter and subtle malt finish, a perfect brew to celebrate the fourth! Here’s a quick grilling recipe that will make this IPA shine and make for a great simple pairing for any day!
Blood Orange Scallops w/ Red Quinoa and Devil’s Triangle Pickled serrano peppers 
Ingredients :
2 cups of red quinoa
1/2 cup of zested tangerines
1 lb of fresh diver scallops
1/4 cup blood orange juice
2 Tbsp lemon juice
Twelve 8-inch wooden skewers (soaked in water for 30 minutes to prevent scorching)
Sea Salt and Pepper (to taste)  1/4 Cup olive oil
Carefully skewer each scallop (two scallops per skewer spread apart evenly) brush olive oil and seasoning on the scallops and place on the grill for 2 to 3 min (flip the once at a minute and a half)
Meanwhile boil water and add the quinoa, stir and let sit for 15 min, at the last 5 min add the zested tangerines and salt and pepper to taste, Then whisk together the olive oil, blood orange juice and salt and pepper to a nice consistent mixture.
 Devil’s Triangle Pickled Serrano Peppers
Ingredients:
2 tbsp organic Florida Crystal sugar
1 tbsp salt
½ cup vinegar
2 tbsp water
1 cup of Devil’s Triangle Unfiltered IPA
6 serranos thinly sliced
In a pan, add the sugar, salt, vinegar and water and turn to medium heat. Stir just until the salt and sugar have dissolved, remove from heat. Stir in the beer, pour into a jar.
Refrigerate until cold, about 20 minutes.
Add the Serranos to the jar, replace the lid and refrigerate for at least 24 hours.
Stored correctly this will last for several weeks
Plate the Quinoa, topped with scallops and pickled peppers then drizzle the blood orange dressing over top for a citrus bomb of flavors and nice a steady heat from the peppers that’s intensified by the melange of hops in the Devil’s Triangle IPA and enjoy!

FBC “Floats” Into Summer…Florida Style!

Seven days of summer have passed, and the solstice has brought us nothing but unrelenting (some would say ravenous) heat and summer rains! But don’t fret fellow Floridians, because the beautiful breezy summer days are coming and FBC will be there with you every step of the way!

Today we have made two delicious summer “floats” that will keep you refreshed and cool under the scorching Florida sun!

Buoy Berry Bomb

Ingredients:

1 scoop (or 1/4 cup) of fresh Strawberry or Raspberry sorbet

1/2 Kiwi sliced and muddled (to taste)

12 ounces (chilled) of Key West Southernmost Wheat

Muddle the kiwi into an official 12 ounce Florida Beer Company glass (If you don’t have an FBC glass then a standard pint glass will do in a pinch 😉 ) , then pour in  (slowly) the chilled Southernmost Wheat add 1 scoop of delicious berry sorbet and be swept away by the berry, kiwi and key lime bliss! (You can also muddle fresh strawberries along with the kiwi for added complexity)

Ingredients:

Craft & Cuisine : A Mouthwatering Beer Dinner Bliss

Hello devout FBC fans and lovers of local libations and cuisine! This Thursday, we have paired up with Viera’s own Pizza Gallery for a night of beer pairing delight! This being our second beer pairing dinner with the famed Pizza Gallery’s Executive Chef Chris Dickman, we decided to kick it up a notch, by doing a night of high-end street food inspired courses!

This Thursday June 27th 7PM $35 Per Person for 5 courses paired to 5 FBC Brews!

Featured brew of the night : Selkie Belgian Rye Pale Ale! Our collaboration brew with Barley Mow Brewing Company out of Largo.

Selkie Belgian Rye Pale Ale
Named after the mythological Irish shape shifting creature of lore. We merged two major beer styles into one, while celebrating both FBC’s and Barley Mows uniqueness and culture.

It is a lighter style brew with  of tangerine, citrus peel and  peppery spice aromas. It’s a pure combination of fruity Belgian yeast and rye spice, followed by a burst of hop flavor and finishes with a  smooth, dry, biscuit malt backbone. This beer is a true marriage of citrus, woodsy herbal flavors though out, and ends with a light toasted quality. A perfect brew for the hot summer months.

FBC Gets Back In the Kitchen: Baking with Gaspar’s Porter

We at the Florida Beer Company enjoy making beer and food pairings when we cook at home. It helps us get more familiar  with the versatility of the brews and see the  flavors really shine. By doing this we get a chance to see what compliments, intensifies or even makes an interesting contrast.

Today we chose to make, soft, chewy, chocolate and molasses infused cookies with Gaspar’s Porter. We also decided that making them into cookie sandwiches with home-made whipped cream was the most genius idea of all time. This actually helped bring the coffee, dark chocolate and roasted flavors together nicely to help lighten up the heavy flavors of  the cookie.

With out further ado here is our recipe for Gaspar’s Porter cannonball Cookie! Anchors Away!

Gaspar’s Porter Cannonball Cookie

 

Ingredients:

1 stick organic, no salt butter, softened

1 1/2 cups of unbleached flour

1/4 cup fair trade organic dark chocolate cocoa

1/2 tsp of baking soda

1 1/2 cups fair trade chocolate chips

1/2 Fresh From Florida brown sugar

1/4 Fresh From Florida Sugar

1 1/2 tbsp of organic molasses

1/2 tsp  organic vanilla

1 cage free organic egg

6 oz of Gaspar’s Porter

Whipped Cream

1 cup of heavy whipping cream

1 tbsp of confectioner sugar

1/2 tsp vanilla

– Combine the butter, sugar, vanilla, molasses and egg together and stir together, you can also you your mixer using the paddle attachment to help cream the butter. Once this is done, mix in dark chocolate cocoa powder, chocolate chips. Then pour in the flour and beer by alternating while stirring. Once mixed thoroughly place in fridge to cool dough for roughly 45 min – 1 hour. This will help the butter to reconstitute and make for a chewier and softer cookie.

– Once cooled remove the dough,  put small scoops on parchment paper on top of the cookie trays and place in  oven at 350 degrees for 15-20 min.

-While waiting for the cookies to bake take your whipped cream ingredients and whip them together creating a nice thick consistency.

-Once the cookies have baked and are cooled place a dollop of cream on one cookies and mash the two of them together.

We garnished our cookies with dark chocolate covered espresso beans from William Dean chocolates to bring it over the top!

FBC Takes on South Florida Beer Week – The H is O

This weekend starts off the 2nd annual South Florida Beer Week! With so many events from tap take overs, beer dinners and new beer releases, FBC will be there every step of the way to guide you through this craft beer labyrinth!

South Florida Beer Week is a celebration of the deliciousness that is comprised of : malt, hops, water and yeast, AKA BEER! From your favorite local craft breweries, to the brews from the Rockies and abroad, we raise our pints with pride to usher in this week of splendiferous brews!

The Week is from January 19th through the 26th, and is from Jupiter to Miami! The weeks festivities caps off with the famed Jupiter Craft Beer Festival and Field of Beers on Jan 25th and the 26th!

FBC and Publix Aprons Cooking School Pair Up! Florida Style…

As craft beer keeps flexing its muscles, by transcending from a niche trend found only in small bottle shops or restaurants, to now found nation wide in almost all of your local markets. What better way to celebrate this then to team up with one of Florida’s oldest and local supermarkets, Publix.

Publix markets have been progressing for years by catering to the masses. A great example of this, is  their newly introduced Greenwise stores and sections, that promote local, sustainable and organic foods. As craft beer has been growing exponentially over the past few years, and not to be left in the dust, Publix has recently gotten on board and  fully embraced the craft beer world. By adding larger sections of delicious craft to there coolers and warm shelves, they have turned around from there once stale beer aisles of major brand domestics and imports to slowly becoming the leading major supermarket for craft.
At the Florida Beer Company we also strive to support local and get our brands out to all of our loyal patrons. This fall we are teaming up with Publix Aprons Cooking Schools and bringing beer pairings right to you. Now one  does not  have to be a Cicerone or a Cordon Bleu Chef to become a beer and food pairings expert. Our trained staff have been working tirelessly to come up with a menu that represents Florida at it’s finest, by incorporating Fresh From Florida Cuisine with our locally brewed goodness.

We will be attending each class, giving a full history of the Florida Beer Company, talking about our brands and why and how the pair with the delicious food at hand. You will learn how to make some amazing dishes while learning that cooking with beer is easy as apple pie.

These classes will be offered at all Publix Apron Cooking School locations and the class fee is $45 per person. Here is  a list of dates and times:
